Seedream v3 is the generation before v4. It stays on the roster because model upgrades are not uniformly upgrades: v3 has a slightly cooler, more contrasted look, and a prompt tuned against it will not reproduce identically on v4. If you built a series on v3, finishing that series on v3 keeps it coherent.

For new work there is little reason to choose it — it costs the same as v4 and tops out at 2,048 pixels a side rather than 4,096. It is here for continuity, not as a recommendation.
